or transparent violet. It should
be stored in a cool, dry and well-

Pumpkin soup

Peel and dice the pumpkin
and cook in a perforated

solid cooking container with a
little butter. Cover* and sweat

Place all ingredients in a pan,
add the stock and the grated
rind and juice of an orange and
purée.

and pepper. Warm up and serve
