Fish curry
Serves 4
Ingredients:
400 g tinned pineapple chunks
in juice
1 red pepper
1 banana, sliced
600 g cod fillet
3 tbsp lemon juice
40 g butter
125 ml white wine
Salt, sugar and chilli powder
2 tbsp curry powder
2 tbsp cornflour
Method:
1. Quarter the pepper, remove the seeds and pith and
cut into strips. Chop the fish roughly. Drain the
pineapple, reserving 125 ml of the juice.
2. Place the fish in a dish and drizzle with the lemon
juice. Stir in the pineapple, red pepper, banana,
butter, wine, pineapple juice, seasoning and cornflour.
3. Cover and cook for 5 minutes at 800/900 W, then for
a further 15 minutes at 450 W.
