Golden curried potatoes
Serves 6
Ingredients:
1000 g new potatoes or diced
large potatoes
2 onions, diced
20 g butter
3 tbsp curry powder
500 ml vegetable stock
100 ml double cream
250 g peas
Salt and pepper
Method:
1. Peel or scrub the potatoes and dice if large. Place
the butter and onions in a bowl, cover and cook for
4 minutes at 800/900 W. Add the potatoes, curry
powder and stock, cover and cook for a further
10 minutes at 800/900 W.
2. Stir in the cream and peas. Cover and cook for
10 minutes at 600 W, then for a further 10 minutes
at 450 W. Season with salt and pepper.

Tip
The golden colour of the
potatoes in this dish is due to
the turmeric in the curry powder.
