Bombay potato masala

Ingredients:

lb) baking potatoes,
cubed
25 g (1 oz) butter
1 onion, finely sliced
3 garlic cloves, crushed
1 tsp mustard seeds
1 tsp cumin seeds
2 tsps garam masala
1

tsp chilli powder
1

tsp ground turmeric
350 g (12 oz) chopped
tomatoes, drained
Method:
1. Place the potato cubes in a perforated steam
oven container and steam at
120°C for 3–4 minutes or 100°C for
7–8 minutes.
2. Meanwhile, place the mustard and cumin
seeds onto a baking tray, and roast in a hot
oven until they pop.
3. In a solid container combine the potatoes
with all the remaining ingredients.
Cover with foil, and steam for a further
10 minutes at 120°C or 20 minutes at 100°C.
Serve immediately.
