Ratatouille with meatballs
Serves 4
Ingredients:
250 g (9 oz) minced pork or beef
1 red pepper
1 yellow pepper
1 aubergine
1 courgette
250 g (9 oz) beef tomatoes
1 onion
2 garlic gloves
Salt and pepper
Tabasco sauce
1 tsp herbes de Provence
100 ml (6 tbsp) tomato ketchup
2 dsp tomato purée
Method:
1. Form the mince into small meatballs. Finely
chop the peppers, aubergine, courgette,
tomatoes, onion and garlic.
2. Arrange the meatballs in a solid container
and scatter the vegetables over the top.
Season with salt, pepper, Tabasco and herbs.
Stir in the ketchup and tomato purée, and
steam for 16–18 minutes at
100 °C.
3. Add more seasoning to taste, if liked.
4. Serve as an accompaniment to rice, which
may be cooked in the steam oven at the
same time (see cooking charts at the back of
the book for cooking times).
