Marinated salmon steaks
Serves 4
Ingredients:
4 salmon fillets
4 tbsp olive oil
3 spring onions
20 g (

oz) fresh dill, finely
chopped
20 g (

oz) fresh flat leaf
parsley
2 tbsp white wine vinegar
Zest and juice of 1 lime
Salt and black pepper
Method:
1. Place the salmon fillets in a shallow oven dish.
2. Prepare the marinade by combining the
remaining ingredients. Pour over the salmon
fillets and leave to marinate for 24 hrs.
3. Discard the marinade and place the salmon
fillets in a perforated steam container. Steam
at 95°C for 5 minutes.
4. Serve with freshly steamed vegetables or
salad.
Tip
The word “marinade” comes from the
latin “mare”, meaning “sea”.
Originally only fish was marinated,
either whole or in fine slivers.
Nowadays it is just as popular to
marinate meat and vegetables.
