Fiery crab-filled courgettes
Serves 4
Ingredients:
4 large courgettes
1 yellow pepper, de-seeded and
finely diced
2 celery sticks, finely cubed
1 tbsp capers
1 tbsp black olives, chopped
450 g (1 lb) fresh crab meat
4 tbsp mayonnaise
Zest and juice of 1 lime
Few drops of chilli sauce
Salt and freshly ground black
pepper
Pinch of cayenne pepper
50 g (2 oz) Mozzarella, grated
Method:
1. Remove the ends of the courgettes. Cut in half
lengthways and remove the seeds with a
teaspoon. Place on a perforated container and
steam for 2 minutes at 100°C.
2. Meanwhile in a mixing bowl, combine the
remaining ingredients except the Mozzarella.
Spoon the mixture into the courgettes and
steam for a further 3 minutes.
3. To complete the dish, sprinkle the courgettes
with the mozzarella and place under a pre-
heated grill until golden brown.

Courgettes
or zucchini are a member
of the squash family. They come in
various shapes, and are available in a
variety of colours from green to
yellow. Small courgettes are more
tender and aromatic than larger ones,
and are best used before they reach
20 cm in length! They are highly
versatile, and can be steamed, fried,
grilled or baked.
