Lime cheesecake

Soak the raisins in Grappa
and place on one side.

Put the quark into a clean
kitchen cloth and squeeze
out the liquid until it is dry

Separate the eggs and beat
the egg whites until they are
stiff. Put in a cool place.

Beat together the butter,
sugar, vanilla sugar and salt
until creamy. Add the egg yolks,
quark, lime juice and zest and

baking powder and rapidly stir
in. Finally stir in the raisins and
their liquid.

Carefully fold in the beaten
egg whites, pour the mixture
into a greased springform tin,
place on the rack and bake (see
below for settings).
Allow to cool on a rack
before removing from the
tin.

Juice & grated zest of a lime
100 g semolina
