Steamed lemon pudding with a citrus sauce
        
        
          Serves 4
        
        
          Ingredients:
        
        
          110 g (4 oz) self-raising flour
        
        
          110 g (4 oz) caster sugar
        
        
          110 g (4 oz) butter and a little
        
        
          extra for greasing
        
        
          2 eggs
        
        
          Zest of 2 lemons
        
        
          Citrus sauce:
        
        
          Juice of 1 lemon
        
        
          Juice of

          3 tbsp caster sugar
        
        
          2 tsp cornflour
        
        
          Method:
        
        
          1. Place the pudding ingredients into a food
        
        
          processor and blend to a smooth
        
        
          consistency. Pour the mixture into 4 greased,
        
        
          ramekin dishes, leaving adequate space for
        
        
          them to rise. Cover with a piece of pleated
        
        
          foil, and steam at 100°C for 25 minutes.
        
        
          2. Meanwhile prepare the citrus sauce. Mix
        
        
          together the lemon juice, orange juice and
        
        
          caster sugar in a solid container, and steam
        
        
          at 100°C for 5 minutes. Mix the cornflour
        
        
          with a little water and whisk into the lemon
        
        
          mixture.
        
        
          3. Turn the puddings out onto a serving dish
        
        
          and drizzle the citrus sauce over the top.
