Pork dim sum
Serves 4
Ingredients:
225 g (8 oz) plain flour
1 egg
2 tsp cold water
For the filling:
175 g (6 oz) minced pork
75 g (3 oz) button mushrooms,
finely chopped
3 spring onions, finely chopped

carrot, finely chopped
2 tbsp light soy sauce
1 tsp fresh ginger
1 tsp garlic, crushed
1 tsp fresh coriander, chopped
1 tsp light sesame oil
For the dip:
2 tbsp dark soy sauce
1 medium green chilli, chopped
2 tsp brown sugar
1 tbsp sherry
Method:
1. Sift the flour into a mixing bowl, add the
egg and the water. Mix to a dough.
2. Divide the dough into 28 pieces and roll
them out to 7.5 cm (3 inch) circles.
3. Combine all the filling ingredients and mix
together in a bowl. Spoon a little mixture
into the centre of each circle. Brush round
the edges with water and pinch the top
together to form a small dumpling shape.
4. Place the dim sums into a perforated
container. Steam at 100°C for 8 minutes.
Tip
Always use fresh
garlic
! To tell how
fresh it is look at the cloves.
They should be nice and firm with a
tight fitting skin. They will either be
white in colour or have a purple tinge
to them. Garlic should be stored
somewhere cool and dry, but not in
the refrigerator.
