Cherry tomato and goats’ cheese bites
Ingredients:
20 cherry tomatoes, large
100 g (3

oz) goats’ cheese
1 tsp dried oregano
Olive oil
Salt and pepper
Method:
1. Remove the top of the cherry tomatoes and
scoop out the seeds. Set to one side.
2. Cut the goats’ cheese into very small pieces
and place into a mixing bowl. Drizzle over a
little olive oil and stir in the dried oregano,
salt and pepper.
3. Spoon the mixture into the tomatoes. Place
on a perforated container and steam for 1
minute at 100°C.
4. Allow to cool slightly before serving.
Tip
Any seasonal tomatoes can be used
instead of cherry tomatoes.
