375 g pumpkin, peeled and roughly chopped ½ tsp thyme, finely chopped Extra virgin olive oil, for drizzling Salt and pepper, to taste ½ red onion, roughly chopped 2 garlic cloves, chopped 1 tbsp lemon juice 1 tbsp tahini 2 tbsp Greek yoghurt Thyme leaves, extra, to serve Extra virgin olive oil, extra, to serve R OA S T P UM P K I N A N D T H Y M E D I P I NG R E D I E N T S D I R E C T I ON S Preheat the oven on Fan Plus at 180°C. Place pumpkin on a universal tray, sprinkle with thyme, salt, pepper and drizzle with extra virgin olive oil. Place the tray in the oven on shelf position 2 and roast for approximately 25 minutes, or until soft. Allow to cool. Meanwhile sauté onions in a small frying pan over medium heat, induction setting 5, for 3 minutes, or until starting to soften. Add the garlic and continue to cook until the garlic is soft (2-3 minutes). Place all ingredients in a blender and pulse until smooth, add a splash of water if needed. Spoon into a bowl, top with extra thyme leaves, season and drizzle with extra virgin olive oil before serving.
