2 zucchini, grated 1 cup mixed herbs, chopped (parsley, basil, coriander, mint, rosemary) ½ red onion, finely chopped 6 eggs, lightly beaten 110 g (¾ cup) buckwheat flour 1 tsp baking powder 125 ml (½ cup) extra virgin olive oil pinch of salt and pepper 1 tomato, thinly sliced 50 g feta, crumbled or other soft cheese Z U C C H I N I H E R B A N D T OMA T O S L I C E I NG R E D I E N T S D I R E C T I ON S Preheat the oven on Fan Plus at 190 ⁰ C, with the baking and roasting rack on shelf position 2. In a bowl combine the zucchini, herbs, onion, eggs, flour, baking powder, oil and salt and pepper. Pour into a lined 6-cup capacity baking dish and then layer the tomatoes over the top before sprinkling on the cheese. Place the dish on the rack and bake for 30-35 minutes, or until cooked through.
