½ kumara/sweet potato, chopped into 1 cm pieces (to make 1 cup mashed sweet potato) ½ tsp baking powder 125 g (1 cup) almond meal 35 g ( ⅓ cup) cacao powder 1 tsp salt flakes 1 tsp ground cinnamon 3 eggs, lightly beaten 60 ml (¼ cup) light extra virgin olive oil 80 ml ( ⅓ cup) maple syrup 1 tsp vanilla extract 60 ml (¼ cup) nut, rice or soy milk 100 g dark chocolate (85 % cacao), roughly chopped 50 g (½ cup) walnuts, chopped S WE E T P O T A T O A N D WA L N U T C HOC B R OWN I E S I NG R E D I E N T S D I R E C T I ON S Preheat the oven on Fan Plus at 170 ⁰ C, with the baking and roasting rack on shelf position 2. Place the kumara on a universal tray. Place the tray on shelf position 2 and bake for 10 minutes, or until the kumara is very tender, then blitz or mash into a puree. Place in a mixing bowl and set aside to cool. Combine the baking powder, almond meal, cacao powder, salt and cinnamon in a bowl. In another bowl whisk the eggs, then add the oil, maple syrup, vanilla and milk and combine. Stir the kumara mash into the wet ingredients and then add to the dry ingredients and mix well. Add in the chocolate and walnuts and stir through. Pour into a 16 cm x 26 cm baking tin, lined with baking paper. Place onto the rack and cook for 20 minutes, or until the top is just cooked.
