60 Trout with nut butter Serves 2 | Preparation time: 30–40 minutes Ingredients For the trout: 2 trout (350 g each), ready to cook 1 tbsp. rapeseed oil Salt Pepper For the nut butter: 70 g butter 50 g whole walnuts | roughly chopped Salt Pepper Accessories: Flat, heat-proof plate Gourmet oven dish Preparation Pre-heat the plate in the drawer on a setting of 5 bar segments for 15 minutes. Season the inside and outside of the trout with salt and pepper. Place the trout on the plate in the drawer and cook. To make the nut butter, leave the butter to melt in a pan. Heat the butter until it is light brown in colour. Crush the walnuts and add to the nut butter. Season with salt and pepper to taste. Heat the rapeseed oil in the Gourmet oven dish and sear the trout on a high heat for around 2 minutes on both sides. Warming drawer settings  Core temperature: 52–54 °C Duration: 25–35 minutes
