Miele Dialog Oven 6 rules to using the M Chef Technology 1. Use M Chef + the cooking function you would use in the traditional recipe When cooking in the Dialog oven, the first step is to use the same cooking function you normally would in conjunction with the M Chef Technology. E.g. if you normally cook on “Fan Plus” then you would select “M Chef + Fan Plus” 2. Temperature selection The temperature selected on the Dialog oven should be set 20°C higher than the normal cooking temperature on a conventional oven. E.g. if you normally cook on 160°C then select 180°C on the Dialog Oven (exception is recipes that use the grill function). The temperature needs to be higher due to the extra speed of the dialog oven (by up to 70% in some occasions). By raising the temperature, the oven can still achieve the desired browning effect and crispy crusts in the shorter cooking time. 3. Gourmet Units Alongside time and temperature, the Dialog oven comes with a new cooking parameter. With “Gourmet Units” the amount of energy being transferred into the food can be controlled. However, it is not always clear how many Gourmet Units are necessary to achieve the desired degree of doneness. Therefore, the user can leave this parameter empty. The Dialog Oven cookbook will offer suggestions on the best ‘Intensity’ setting for different food types. In addition, the ‘Gourmet Assistant’ mode can be used to help assist with cooking. 4. Intensity With the new parameter ‘Intensity‘, the speed in which the food can absorb the energy from the antennas can be set. Three settings (Gentle, Medium and Strong) define how many Gourmet Units per minute (average) are transferred to the food. 5. Position Best results can be achieved by using shelf level 2. This is the recommended shelf level for almost all applications and recipes. Please position the food as centrally as possible on the baking tray/roasting rack. 6. Cooking time The Dialog oven is up to 70% faster than a conventional oven. The progress of the cooking process should therefore be checked manually after half of the cooking time it would have taken in a conventional oven. Often the food will be already at the desired degree of doneness.
