Season with salt inside and out. To make the stuffing, finely dice the shallots, garlic and bread. Mix together the capers, egg yolk, olive oil, shallots, garlic and bread. Season with salt, pepper and chilli powder. Stuff the salmon with the mixture. Seal the opening with small wooden skewers. Grease the glass tray. Place the salmon on the glass tray and insert the food probe. Place the glass tray in the oven and cook.
