As soon as it begins to bubble, add a dash of oil and heat. Season the beef with salt and pepper and sear it on all sides. Add the onions, bay leaves, cloves and brown sugar and cook for a further 3 minutes. Dust the beef with flour and fry for a further 2–3 minutes. Add the beef stock and vinegar, stirring constantly until you have a smooth sauce. Place the rack in the oven. Start the Automatic programme or pre-heat the oven according to cooking stage 1. Place the beef hash in the glass oven dish. Manual: Adjust settings as indicated for cooking stage 2. Place the glass oven dish in the oven and cook. Stir halfway through cooking. Before serving, season again with salt and pepper.
