TSOUREKI (GREEK EASTER BREAD) INGREDIENTS Red eggs 3 eggs 5 g packet Easter egg red dye 80 ml (⅓ cup) red wine vinegar Water, to cover 1 tsp olive oil Combine the eggs, Easter egg red dye, red wine vinegar in a small saucepan, add water, just to cover. Place a small round piece of baking paper of the eggs, to submerge. Place the eggs into the steam oven and Steam at 100°C for 15 minutes. Cool the eggs in the red dye mixture and then rinse gently. Lightly rub the oil over the eggs. Combine the flour, yeast, salt, sugar, milk, eggs, orange rind, spices and water in the bowl of a freestanding mixer with a dough hook attachment. Mix on medium speed for 5 minutes or until a soft dough forms. Gradually add the butter, one piece at a time, mix for 3 minutes or until a smooth dough forms. Place the dough in a lightly greased bowl and prove in the oven using Prove yeast dough for 45 minutes, or until doubled in size. Divide the dough into 3 pieces. Shape each piece into a 45 cm-long log and plait the pieces together. Bring the ends together to form a wreath. Place wreath onto the universal tray and prove in the oven for another 15 minutes. Meanwhile, combine the extra egg and extra milk. Preheat the oven on Moisture Plus with Fan Plus at 180°C with one manual burst of steam. Brush the wreath with the egg wash. Place the bread into the oven on shelf level 2 and release the burst of steam immediately. Bake for 25 minutes, or until bread is golden and cooked through. Cool before eating, serve with the red eggs and some butter. Red egg dye is available around Easter time from some delicatessens. Tradition has it that the tsoureki symbolizes the resurrection of Christ and rebirth in general, as the flour is molded into shape and rises and takes on life while transforming into its final shape. The red-dyed egg, which is usually placed on top of the braid, symbolizes the blood of Jesus. Traditionally, families across Greece dye eggs red on Holy Thursday. Dying eggs red in anticipation of Greek Easter is one of the oldest and most beloved traditions in Greece.
