56 Cream of rocket soup Serves 4 | Preparation time: 55 minutes Ingredients 100 g spinach, frozen 1 onion | diced 20 g butter 1 tbsp. white flour 70 g rocket 200 g cream cheese 600 ml vegetable stock ½ tsp. salt Pepper Lemon juice For serving: 4 tbsp. rocket Accessories: Microwave-safe bowl, capacity 1.4 l Glass tray Heat-resistant cling film Hand-held blender Preparation Place the glass tray in the oven. Place the spinach on a plate, place in the oven, cover and defrost using the settings indicated for cooking stage 1. Leave to rest for around 5 minutes. Put the diced onions and half of the butter in a bowl and place on the glass tray in the oven. Cover and cook using the settings indicated for cooking stage 2. Knead the butter and flour together and shape the mixture into a dumpling. Squeeze out the spinach and roughly chop along with the rocket. Mix the cream cheese with the onions in a bowl. Add the rocket, spinach, stock, salt and pepper and stir. Add the flour dumpling. Place the soup in the oven, cover and cook using the settings indicated for cooking stage 3. Purée the soup. Season with salt, pepper and lemon juice to taste. Sprinkle with rocket leaves before serving.
