54 Vegetable and rice ragout Serves 4 | Preparation time: 65 minutes Ingredients 75 g bacon, diced 1 onion | finely diced 2 red capsicums | finely sliced 75 g roasted red capsicum from a jar (drained weight) 125 g cucumber | diced 250 g Mettwurst sausage, smoked | sliced 250 g tomatoes | diced 70 g long grain rice 250 ml vegetable stock 3 tbsp. tomato paste ½ tsp. salt Pepper Accessories: Microwave-safe ovenproof dish (approx. 24 cm x 24 cm x 6 cm) Glass tray Heat-resistant cling film Preparation Place the ingredients in an ovenproof dish and stir to combine. Place the ovenproof dish on the glass tray in the oven, cover and cook using the settings indicated for cooking stage 1. Stir halfway through cooking. Stir the ragout, cover and cook using the settings indicated for cooking stage 2. Stir again halfway through cooking.
