46 Polenta with paprika and capsicum Serves 6 | Preparation time: 25 minutes Ingredients 1 red capsicum 500 ml vegetable stock 125 g polenta (cornmeal) ½ tsp. salt 1 tsp. sweet paprika ¼ tsp. paprika, hot Accessories: Microwave-safe bowl, capacity 1.4 l Glass tray Heat-resistant cling film Preparation Finely slice the capsicum. Place the capsicum slices in a bowl with the vegetable stock, polenta and seasoning. Mix together. Place on the glass tray and place in the oven.
