42 Cauliflower in a mustard sauce Serves 4 | Preparation time: 55 minutes Ingredients 30 g butter 2 tbsp. plain white flour 1 cauliflower (1.2 kg) 1½ tbsp. water 250 ml meat stock 100 g cream 2 ½ tbsp. coarse grain or sweet mustard ½ tsp. salt Pepper 1 tsp. caster sugar Accessories: Glass bowl, capacity 1.8 l Glass bowl, capacity 0.8 l Glass tray Heat-resistant cling film Preparation Knead the butter and flour together to form a dumpling and put to one side. Split the cauliflower up into florets. Put in a large bowl with water and place on the glass tray in the oven, cover and cook using the settings indicated for cooking stage 1. Turn occasionally. Drain the water and cover the cauliflower, placing it to one side. Put the meat stock, cream, mustard and seasoning in a small bowl and mix together. Add the flour dumpling, cover and cook using the settings indicated for cooking stage 2. Stir the sauce until smooth. Season and add sugar to the sauce to taste. Serve with the cauliflower.
