174 Walnut and chocolate pudding Serves 8 | Preparation time 65–70 minutes Ingredients For the pudding: 100 g dark chocolate 5 medium eggs 80 g butter 80 g caster sugar 1½ tsp. vanilla sugar 80 g walnuts, ground 80 g breadcrumbs For the ramekins: 1 tbsp. butter 1 tbsp. icing sugar Accessories: 8 sou é ramekins Rack Preparation Melt the chocolate and separate the eggs. Put the whites to one side for later. Cream the butter, sugar and vanilla sugar until fluy, add the egg yolks and stir. Leave the chocolate to cool and fold into the butter mixture with the walnuts and breadcrumbs. Whisk the egg whites until sti and fold into the mixture. Grease the ramekins and dust with icing sugar. Pour the mixture into the sou é ramekins, place on the rack in the oven and cook. Settings Temperature: 90 °C Duration: 30 minutes Useful tip The sou é ramekins can be replaced with cups.
