162 Mocha flan Serves 4 | Preparation time 45 minutes Ingredients For the mocha milk: 200 ml milk, 3.5% fat 100 g cream 6 g espresso powder, instant For the flan mixture: 1 medium egg 3 medium eggs | yolk only 60 g brown sugar For serving: 2 tbsp. co ee liqueur 250 g raspberries Accessories: Solid cooking container Sieve 4 sou€é ramekins Rack Preparation Mix the milk and cream with the espresso powder, place in a solid cooking container and heat using the settings indicated for cooking stage 1. Whisk together the egg, egg yolks and brown sugar and slowly add the hot mocha milk while stirring. Pour the flan mixture into the sou€é ramekins through a sieve, cover, place on the rack in the oven and cook using the settings indicated for cooking stage 2. Take the sou€é ramekins out of the oven and leave to cool. Before serving, turn the mocha flans out onto plates, drizzle with the co ee liqueur and garnish with raspberries. Settings Cooking stage 1 Temperature: 100 °C Duration: 5 minutes Cooking stage 2 Temperature: 100 °C Duration: 20 minutes Useful tip The sou€é ramekins can be replaced with cups.
