144 Crema Catalana Serves 6 | Preparation time 50–55 minutes + 4 hours for cooling Ingredients 450 g cream 1 tsp. vanilla sugar 4 medium eggs | yolk only 2 tbsp. almonds, chopped 3 tbsp. brown sugar Accessories: 6 sou€é ramekins Rack Preparation Heat the cream in a pan until it has almost boiled. Take o† the cooktop and stir in the vanilla sugar, egg yolk and chopped almonds. Pour the mixture into the sou€é ramekins, cover, place on the rack in the oven and cook. Leave to cool and then chill for approx. 4 hours. Sprinkle brown sugar over the top. Pre-heat the grill. Caramelise under the grill for 4 minutes. Settings Temperature: 90 °C Duration: 30–35 minutes Useful tip The sou€é ramekins can be replaced with cups.
