130 Australian pumpkin soup Serves 4 | Preparation time 35 minutes Ingredients 1 kg pumpkin flesh | diced 400 g sweet potatoes | diced 2 onions | diced 250 ml chicken stock Salt Pepper For the garnish: 250 g chorizo | finely diced 250 ml sour cream 10 g coriander | chopped Accessories: Perforated cooking container Preparation Place the pumpkin flesh, sweet potatoes and onions in a perforated cooking container and cook. Sear the chorizo. Purée the vegetables, add the chicken stock and approx. 250 ml of water, stir and season with salt and pepper. Pour the soup into a pre-warmed soup bowl. Garnish with sour cream, chorizo and coriander.
