104 Minced beef hash Serves 8 | Preparation time 250 minutes Ingredients 30 g butter 1 ½ tbsp. oil 1.2 kg beef, ready to cook | diced Salt Pepper 500 g onions | finely diced 2 bay leaves 4 cloves 1 tbsp. brown sugar 2 tbsp. plain white flour 1.2 l beef stock 70 ml vinegar Accessories: Solid cooking container Preparation Heat the butter in a pan. As soon as it begins to bubble, add a dash of oil and heat. Season the beef with salt and pepper and sear it on all sides. Add the onions, bay leaves, cloves and sugar and cook for a further 3 minutes. Dust the beef with flour and fry for a further 2–3 minutes. Add the beef stock and vinegar, stirring constantly until you have a smooth sauce. Place the beef in a solid cooking container and cook. Season with salt and pepper and serve.
