170 Rack of lamb with vegetables Serves 4 | Preparation time: 60 minutes Ingredients 2 tsp. rosemary 2 crushed cloves of garlic 30 g oil 80 g Dijon mustard 2 tsp. cumin 1 tsp. honey ¼ tsp. salt Pepper | freshly ground 2 racks of lamb (approx. 8 cutlets on each), ready to cook 2 carrots 1 sweet potato 4 new potatoes 2 small beetroots 2 onions 1 tbsp. oil Salt Pepper Accessories: Rack or grilling and roasting insert Universal tray Aluminium foil Preparation Mix together the rosemary, garlic, oil, Dijon mustard, cumin, honey, salt and pepper and spread over the racks of lamb. Place the racks of lamb on the rack or the grilling and roasting insert and place on the universal tray in the oven. Peel the carrots and sweet potato and dice. Halve the new potatoes. Cut the onions and beetroots into wedges. Mix the vegetables with the oil, place on the universal tray and season with salt. Place the universal tray with the vegetables under the meat and cook using the settings for cooking stage 1. Remove the racks of lamb from the oven. Place the vegetables on a higher shelf level and cook using the settings indicated for cooking stage 2. Once the racks of lamb are cooked, wrap them in aluminium foil and leave to rest for 10 minutes. Then carve and serve with the vegetables.
